Today I was honored to spend time with the infamous Jonathan Coleman, culinary artist and extraordinaire. Although I only had a few hours of photojournalist coverage, I did in fact learn a great deal about this amazing individual and his passion for cheesecakes.
Late morning arrived and prep time began. Jon became very focused and said very little as thoughts and ideas swirled though his head. Sounds of cracked pepper and sautéed spinach filled his kitchen. To my surprise, Jon began to speak but quite differently from the man I was introduced to. What was this you ask? Instructions. Yes, Jon spouted out every detail throughout his Spinach Quiche Savory Cheesecake journey. Jon included tips and suggestions but most of all, his learned experiences. His love for his cakes radiated off of him and I witnessed the most pure, content man I knew as Jon Coleman. I found myself swinging my feet from my chair in tune with each word that came from his mouth just as I did when my mother taught me how to bake and this filled my heart with joy.
Mid afternoon drew closer and the aroma of feta and ricotta filled the room and Jon turned back into the cheesecake artist. He began to slice petite cherry tomatoes and parsley to garnish his perfectly browned quiche to complete his masterpiece. And after hours, he succeeded.
Without a doubt, this savory Spinach Quiche was one of the most beautiful cakes I have ever laid eyes on and the most delicious quiche that has ever touched my palette.
